การพัฒนาเกณฑ์มาตรฐานพฤติกรรมการบริโภคอาหารภูมิปัญญาไทย เพื่อการดูแลสุขภาพกลุ่มผู้สูงอายุ

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อศึกษาระดับพฤติกรรมการรับประทานอาหารภูมิปัญญาไทยของผู้สูงอายุในอำเภอพระสมุทรเจดีย์ จังหวัดสมุทรปราการ และเพื่อการพัฒนาเกณฑ์มาตรฐานการบริโภคอาหารภูมิปัญญาไทยสำหรับการดูแลสุขภาพผู้สูงอายุ ตัวอย่างที่ใช้ในการวิจัยคือ ผู้สูงอายุที่มีอายุตั้งแต่ 60 ปี ขึ้นไป โดยแบ่งเป็นการศึกษาเชิงปริมาณ จำนวน 145 คน และการศึกษาเชิงคุณภาพ จำนวน 15 คน เพื่อการสังเกตและสัมภาษณ์ เครื่องมือที่ใช้ในการวิจัยคือแบบสอบถาม แบบสังเกต และแบบสัมภาษณ์ การวิเคราะห์ข้อมูลส่วนบุคคลและพฤติกรรมการบริโภคด้วยสถิติเชิงพรรณนา โดยใช้ค่าความถี่ และร้อยละ ค่าเฉลี่ยและส่วนเบี่ยงเบนมาตรฐาน วิเคราะห์ความสัมพันธ์ของพฤติกรรม
การบริโภคอาหารกับภาวะโภชนาการโดยใช้ไคสแควร์ และการวิเคราะห์เนื้อหา ผลการวิจัย พบว่า ผู้สูงอายุส่วนใหญ่เป็นเพศหญิง มีระดับการศึกษาประถมศึกษา มีรายได้ต่อเดือน 1,001-5,000 บาท การรับประทานอาหาร 3 มื้อต่อวัน มีภาวะโภชนาการปกติร้อยละ 34.5 แต่มีภาวะโภชนาการเกินร้อยละ 63.5 และโรคความดันโลหิตสูงร้อยละ 59.3 รองลงมาโรคไขมันในเลือดสูงร้อยละ 41.4 และโรคเบาหวานร้อยละ 24.8 ตามลำดับ ซึ่งเป็นโรคไม่ติดต่อเรื้อรัง และเกณฑ์มาตรฐานการบริโภคอาหารภูมิปัญญาไทยในการดูแลผู้สูงอายุ ควรรับประทานอาหารตามหลักโภชนาการอาหารหลัก 5 หมู่ รับประทานอาหารหลักให้ครบ 3 มื้อ และลดการรับประทานอาหารหวาน มัน เค็ม เพื่อให้ผู้สูงอายุ
