การลดความชื้นหรือการอบแห้งเป็นการระเหยความชื้นซึ่งประกอบด้วยน้ำเป็นส่วนใหญ่ออกจากผลผลิตเพื่อยับยั้งการเจริญเติบโตของจุลินทรีย์ และ/หรือปฏิกิริยาทางเคมีต่างๆ ในระดับครัวเรือนซึ่งมีปริมาณการผลิตไม่มากนิยมการลดความชื้นด้วยพลังงานจากแสงอาทิตย์ซึ่งเป็นแหล่งพลังงานความร้อนที่ไม่มีค่าใช้จ่าย แต่ในระดับอุตสาหกรรมซึ่งมีปริมาณการผลิตมาก นิยมใช้แหล่งพลังงานที่สามารถควบคุมได้ง่าย เช่น แก็สหุงต้ม น้ำมันเชื้อเพลิง พลังงานไฟฟ้า เป็นต้น บทความนี้นำเสนอเทคโนโลยีการลดความชื้นแบบดั้งเดิมด้วยลมร้อนจนถึงเทคโนโลยีแบบล่าสุดด้วยคลื่นแม่เหล็กไฟฟ้า

Abstract

Drying or dehydration is a process in whichmoisture, mainly water, is evaporated to slow downthe growth of spoilage microorganisms and/or theoccurrence of any chemical reaction. In the householdlevel which has less production dehydration is usedsolar energy which costs nothing in term of energy.However, in the industrial level which has a largenumber of productions, the easy-to-control energysource should be liquid petroleum gas, fuel, electricetc. This article is thoroughly reviewed developmentsin dehydration technology, originating from theconventional hot air to the latest electromagnetic wavetechnology.
