ฤทธิ์ต้านแบคทีเรียของไคโตโอลิโกแซคคาไรด์ที่ผลิตด้วยเอนไซม์ไคติเนส จากต้นอ่อนก้ามปู

บทคัดย่อ

งานวิจัยนี้ศึกษาฤทธิ์ต้านแบคทีเรียของไคโตโอลิโกแซคคาไรด์ที่ได้จากการย่อยไคตินในรูปคอลลอยด์เข้มข้นร้อยละ 1 โดยเอนไซม์ไคติเนสที่สกัดด้วยอะซิเตตบัฟเฟอร์เข้มข้น 0.1 โมลาร์ ที่พีเอช 3.5 จากต้นอ่อนก้ามปูอายุ 2 สัปดาห์ พบว่า ไคโตโอลิโกแซคคาไรด์ที่ได้จากการย่อยไคตินในรูปคอลลอยด์เข้มข้นร้อยละ 1 โดยเอนไซม์ไคติเนสจากต้นอ่อนก้ามปู ที่ใช้เวลาในการย่อย 0.5 ชั่วโมง มีปริมาณร้อยละรวมโมเลกุลขนาดใหญ่ของ (GlcNAc)4, (GlcNAc)5, (GlcNAc)6, (GlcNAc)7 และ (GlcNAc)8 เท่ากับ 92.58 จะยับยั้งเชื้อแบคทีเรียได้ดีที่สุดทั้ง 6 สายพันธุ์คือ แบคทีเรียแกรมบวกประกอบด้วย Bacillus cereus, Listeria monocytogenes, Staphylococcus aureus และแบคทีเรียแกรมลบประกอบด้วย Escherichia coli, Salmonella enterica, Vibrio parahaemolyticus โดยมีค่าความเข้มข้นต่ำสุด ที่สามารถยับยั้งการเจริญของเชื้อแบคทีเรียและค่าความเข้มข้นต่ำสุดที่สามารถฆ่าเชื้อแบคทีเรียเท่ากับ 1.56/1.56, 3.12/3.12, 1.56/1.56, 1.56/3.12, 3.12/6.25 และ 3.12/3.12 ไมโครกรัม/มิลลิลิตร ตามลำดับ
