Strategies for Drying Onion

Abstract

The purpose of this research was to study the drying strategies of onion in drying cabinet. To obtained the optimum conditions for drying, results obtained from experiment are considered. Criteria of the study are qualities, drying time and specific energy consumption. From experiment it was found that the optimum drying conditions were drying air temperature of 50ºC and specific air flow rate of 4.50 kg dry air/h-kg dry onion. Ambient air temperature and relative humidity were 30 ºC and 70% respectively.
