Drying kinetic of Tilapia nilotica drying using hot air

Abstract
The objectives of this research were to study Tilapia nilotica drying using hot air and to find out theappropriate thin layer equation for predicting the drying kinetic of Tilapia nilotica. To achieve these purposes,experiments were conducted on the following conditions: air velocities of 1.0, 1.5 and 2.0 m/s and dryingtemperatures of 50, 60 and 70 =C. The effects of drying conditions on moisture ratio, drying rate and specificenergy consumption were investigated. From experimental results, it was revealed that drying rate andspecific energy consumption increase with increment of drying temperature or air velocity. Furthermore, it wasfound that thin layer equation providing the highest coefficient of determination (R2 , 0.99899) and the lowestroot mean square error (RMSE, 0.0092) is Two term equation.
