Abstract

            พริกไทยดำเป็นสมุนไพรพื้นบ้านที่นิยมใช้กันมาอย่างยาวนานและแพร่หลาย ผลของพริกไทยดำมีรสเผ็ดร้อน นิยมนำมาใช้ในการปรุงอาหารเพิ่มรสชาติและใช้เป็นยาสมุนไพรในการรักษาโรคบางชนิด โดยพบว่าภายในผลพริกไทยดำประกอบด้วยสารอัลคาลอยด์ ฟลาโวน ฟลาโวนอยด์ สเตียรอยด์ แทนนิน ซาโปนิน ฟีนอล ไกลโคไซด์ เทอร์ปีน และลิกแนน เป็นต้น ซึ่งสารเหล่านี้เป็นพฤกษเคมีที่มีฤทธิ์ทางเภสัชวิทยาหลากหลาย เช่น ต้านอาการท้องเสีย ต้านอาการหอบหืด ต้านการอักเสบ ป้องกันโรคหัวใจและหลอดเลือด ต้านอาการไข้ ต้านภาวะซึมเศร้า และต้านมะเร็งหลายชนิด ดังนั้นในบทความปริทัศน์นี้เป็นการรวบรวมสารพฤกษเคมีในพริกไทยดำพร้อมทั้งกลไกการออกฤทธิ์ทางเภสัชวิทยาของสารเหล่านั้น
